- 1 cup fresh or frozen blueberries
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the whole wheat flour, all-purpose flour, sugar, baking powder, and salt.
- In another bowl, whisk the eggs until frothy, then add milk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries.
- Lightly grease the waffle iron if necessary, pour the batter onto the hot waffle iron, and cook until golden brown.
- Serve hot with maple syrup or your favorite toppings.
Notes
For added sweetness, mash in one ripe banana or add nuts for crunch. Keep cooked waffles warm in a low oven while finishing multiple batches.
