Description

Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the eggs until frothy, then add milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries.
  5. Lightly grease the waffle iron if necessary, pour the batter onto the hot waffle iron, and cook until golden brown.
