Description

Ingredients

  • 34 lb roast (beef, pork, or chicken)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup broth (beef, chicken, or vegetable)
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the softened butter, chopped rosemary, thyme, parsley, minced garlic, salt, and pepper. Mix until even.
  3. Pat the roast dry with paper towels. Rub the herb butter mixture all over the meat. Sear the roast in a skillet with olive oil over medium-high heat until browned.
  4. Pour broth into the skillet around the roast. Transfer to the preheated oven and roast for about 1 hour. Check internal temperature aiming for 145°F (63°C) for medium-rare.
  5. Let the roast rest for 15 minutes before slicing and serving.

Notes

For extra flavor, prepare the herb butter a day in advance. Adjust seasoning and doneness to your preference.
