  • 1 medium cauliflower, cut into florets
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 teaspoons ginger-garlic paste
  • 2 teaspoons cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Allow them to splutter to release their fragrant oils.
  2. Add the chopped onions and sauté until golden brown, then stir in the ginger-garlic paste and cook for about a minute.
  3. Add diced tomatoes, turmeric, garam masala, red chili powder, and salt. Cook until tomatoes soften.
  4. Transfer the mixture to the slow cooker. Add cubed potatoes and cauliflower florets, stirring to coat. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender. Garnish with fresh cilantro before serving.

Notes

For added flavor, consider using vegetable broth instead of water. Adjust heat levels with more chili if desired.
