Description

Crispy edges and soft, fluffy insides infused with aromatic garlic and fragrant herbs make these the ultimate side dish.


Ingredients

  • 2 pounds baby potatoes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C), wash and scrub the baby potatoes, then cut each in half.
  2. In a large bowl, combine olive oil, minced garlic, dried rosemary, dried thyme, and salt and pepper, then mix well.
  3. Add the halved potatoes to the bowl and toss until thoroughly coated.
  4. Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  5. Once roasted, remove from the oven and garnish with fresh parsley. Serve hot.

Notes
