- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1/2 cup raspberry puree
- 1/4 cup lemon juice
- 2 large eggs
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs, lemon juice, and lemon zest to the butter-sugar mixture and mix until well combined.
- Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Pour half of the batter into the prepared pan, then swirl in the raspberry puree. Add the remaining batter on top and create swirls with a knife.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the bars in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
These bars are best served chilled or at room temperature. Dust with powdered sugar or serve with vanilla ice cream for extra flair.
