Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs, then stir in orange juice, zest, and vanilla extract.
- Gradually combine the wet and dry mixtures, gently stirring until just combined.
- Fold in the chopped cranberries.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before transferring to a wire rack.
