- 2 cups grated zucchini
- 1 cup walnuts, chopped
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the zucchini, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually add to the wet ingredients, mixing until just combined. Fold in the walnuts gently.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes, checking for doneness with a toothpick. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Squeeze excess moisture from zucchini before use. Can substitute walnuts with pecans or chocolate chips.
