Description

Deliciously crispy zucchini fritters that are perfect as a snack, appetizer, or side dish, packed with flavor and easy to make.


Ingredients

  • 2 medium zucchini, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • Oil for frying

Instructions

  1. Grate the zucchini and sprinkle it with salt, letting it sit for about 10 minutes to draw out moisture. Squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini, all-purpose flour, Parmesan cheese, egg, green onions, garlic, black pepper, and oregano. Mix well to form a thick batter.
  3. Heat oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan and flatten slightly. Fry for 3-4 minutes on each side until golden brown.
  4. Remove the fritters and drain on paper towels. Serve warm with your choice of dipping sauce.

Notes

Serve with sour cream or yogurt, marinara sauce, or a fresh salad. For storage, refrigerate in an airtight container for up to 3 days.
