- 2 medium zucchini, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup chopped green onions
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- Oil for frying
Instructions
- Grate the zucchini and sprinkle it with salt, letting it sit for about 10 minutes to draw out moisture. Squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, all-purpose flour, Parmesan cheese, egg, green onions, garlic, black pepper, and oregano. Mix well to form a thick batter.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan and flatten slightly. Fry for 3-4 minutes on each side until golden brown.
- Remove the fritters and drain on paper towels. Serve warm with your choice of dipping sauce.
Notes
Serve with sour cream or yogurt, marinara sauce, or a fresh salad. For storage, refrigerate in an airtight container for up to 3 days.
