Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs until light and frothy, then stir in the milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Lightly grease the waffle iron with non-stick spray.
  6. Pour a ladleful of batter onto the hot waffle iron and cook until golden brown, about 4-6 minutes.
  7. Repeat with the remaining batter until all waffles are cooked.
  8. Serve warm with toppings of your choice.

Notes

Avoid overmixing to keep waffles light and fluffy. You can also prepare the dry ingredients the night before.
