Description

A delightful way to enjoy zucchini with a crispy, cheesy coating, these Baked Zucchini Fries with Parmesan are perfect as a snack or side dish.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 egg
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F (220°C). Wash the zucchinis and cut them into thin strips resembling fries.
  2. In a bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. Mix until evenly distributed.
  3. In another bowl, beat the egg and blend in the olive oil. Dip zucchini strips into the egg mixture and then roll in the breadcrumb mixture until coated.
  4. Place coated zucchini fries on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown and crispy.

Notes

Serve hot with marinara sauce, ranch dressing, or garlic aioli. Store leftovers in an airtight container in the refrigerator for up to 3 days.
