Description

A comforting and indulgent dish that blends the rich flavors of caramelized onions with soft gnocchi, topped with bubbling cheese.


Ingredients

  • 1 pound gnocchi
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cups beef or vegetable broth
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes, stirring occasionally.
  3. Once the onions are caramelized, add the broth and simmer for 5 minutes. Season with salt and pepper to taste. Cook the gnocchi according to package instructions, then drain them.
  4. In a baking dish, combine the gnocchi and the onion mixture. Top generously with Gruyère and Parmesan cheeses. Bake for about 20 minutes, or until the cheese is bubbly and golden.
  5. Remove from the oven and let it cool slightly. Garnish with fresh thyme and serve warm.

Notes

For a vegetarian version, use vegetable broth. This dish pairs well with a crisp green salad or crusty bread.
