- 1 pound gnocchi
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 2 cups beef or vegetable broth
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the butter and olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes, stirring occasionally.
- Once the onions are caramelized, add the broth and simmer for 5 minutes. Season with salt and pepper to taste. Cook the gnocchi according to package instructions, then drain them.
- In a baking dish, combine the gnocchi and the onion mixture. Top generously with Gruyère and Parmesan cheeses. Bake for about 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool slightly. Garnish with fresh thyme and serve warm.
Notes
For a vegetarian version, use vegetable broth. This dish pairs well with a crisp green salad or crusty bread.
