- 1/2 cup sugar
- 1/4 cup vegetable oil

Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix together the applesauce, sugar, vegetable oil, vanilla extract, and egg until smooth.
- In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Optional add-ins include raisins, chopped nuts, or chocolate chips. For best results, use unsweetened applesauce and consider substituting half the flour for whole wheat.
