Description

These moist and fluffy applesauce muffins are naturally sweetened and spiced with cinnamon, making them a delightful treat for breakfast or a snack.


Ingredients

  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together the applesauce, sugar, vegetable oil, vanilla extract, and egg until smooth.
  3. In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.

Notes

Optional add-ins include raisins, chopped nuts, or chocolate chips. For best results, use unsweetened applesauce and consider substituting half the flour for whole wheat.
