Ingredients
Scale
- 2 cups grated zucchini
- 1 cup grated apple
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup butter (for frosting)
- 1 cup brown sugar (for frosting)
- 3 tbsp milk (for frosting)
- 1 tsp vanilla extract (for frosting)
- 2 cups powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine grated zucchini and apple.
- In another bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Mix together vegetable oil, eggs, and vanilla extract; then combine with dry ingredients and fold in zucchini and apple mixture until just incorporated.
- Pour batter into the loaf pan and smooth the top. Bake for 50-60 minutes until a toothpick comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
- For the frosting, melt butter and brown sugar in a saucepan over medium heat, then add milk and bring to a gentle boil. Remove from heat, add vanilla, and whisk in powdered sugar until smooth.
- Once the bread is cool, spread the brown sugar frosting evenly over the top before slicing.
Notes
For extra texture, mix in chopped nuts or raisins. Use fresh, seasonal produce for best flavor.
