Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In a separate bowl, combine the shredded apples, brown sugar, lemon juice, and nutmeg.
- Fold the apple mixture into the cookie dough until evenly distributed.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store leftover cookies in an airtight container at room temperature for up to 5 days. You can also freeze them for up to 2 months.
