Ingredients

- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/3 cup unsalted butter, melted
- 1 egg
- 1/2 cup milk
- 1 cup apples, peeled and diced
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, oats, brown sugar, baking soda, baking powder, cinnamon, and salt. Whisk until well mixed.
- In another bowl, whisk together the melted butter, egg, and milk until smooth.
- Stir the wet ingredients into the dry ingredients until just combined. Gently fold in diced apples and nuts if desired.
- Divide the batter among the muffin cups, filling them about two-thirds full. Bake for 20-25 minutes until a toothpick comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with honey or butter. Store in an airtight container at room temperature for 2-3 days, or freeze for up to 3 months.
