Description

Delicious and comforting muffins featuring apples, cinnamon, and a crunchy crumble topping.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, melted
  • 1 egg
  • 1/2 cup milk
  • 1 cup apples, peeled and diced
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, oats, brown sugar, baking soda, baking powder, cinnamon, and salt. Whisk until well mixed.
  3. In another bowl, whisk together the melted butter, egg, and milk until smooth.
  4. Stir the wet ingredients into the dry ingredients until just combined. Gently fold in diced apples and nuts if desired.
  5. Divide the batter among the muffin cups, filling them about two-thirds full. Bake for 20-25 minutes until a toothpick comes out clean.
  6. Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with honey or butter. Store in an airtight container at room temperature for 2-3 days, or freeze for up to 3 months.
