- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 1 teaspoon ground cinnamon
- 4 packages (8 oz each) cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 4 cups peeled and sliced apples
- 1/4 cup brown sugar
- 1/4 cup flour
- 1/2 cup oats
Instructions
- Preheat the oven to 325°F (160°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and 1/4 cup of sugar until well incorporated. Press this mixture firmly into the bottom of a springform pan to form a crust.
- In a large mixing bowl, beat the softened cream cheese, vanilla extract, and remaining 3/4 cup of sugar until the mixture is smooth and creamy. Add the eggs, one at a time, and mix well after each addition until fully combined.
- Spread the cheesecake mixture evenly over the prepared crust in the springform pan. This layer should be smooth and evenly distributed.
- In a separate bowl, combine the sliced apples, brown sugar, ground cinnamon, and flour. Mix until the apples are well coated, then layer this apple mixture on top of the cheesecake.
- In another bowl, mix the oats, remaining flour, melted butter, and remaining sugar to form a crumble mixture. Sprinkle this topping generously over the apples for added texture.
- Bake the cheesecake in the preheated oven for 60 to 70 minutes or until the center is set and the top is lightly golden.
- Once baked, allow the cheesecake to cool at room temperature for about an hour. Then, refrigerate the cheesecake for at least 4 hours (or preferably overnight) before serving for the best results.
Notes
For the best results, use room temperature cream cheese and allow the cheesecake to cool completely before refrigerating.
