Description

Ingredients

  • 3 lbs beef shoulder
  • 2 cups apple cider
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, chopped
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 300°F (150°C). Heat olive oil in a large Dutch oven over medium-high heat.
  2. Season the beef shoulder with salt and pepper, then brown it on all sides in the hot oil. Remove the meat and set aside.
  3. Add the diced onion and minced garlic to the pot, sautéing until softened and fragrant (about 2-3 minutes). Next, add the chopped carrots and cook for another 2-3 minutes.
  4. Pour in the apple cider, scraping up any brown bits. Return the beef to the pot along with thyme and bay leaves. Cover and transfer to the oven. Braise for 3-4 hours, or until fork-tender. Remove from the oven, let rest, then slice and serve.

Notes

This dish pairs well with mashed potatoes, wild rice, or a crusty loaf of bread. It can be stored in the fridge for up to 3 days or frozen for up to 3 months.
