- 3 lbs beef shoulder
- 2 cups apple cider
- 1 onion, diced
- 3 cloves garlic, minced
- 4 carrots, chopped
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 300°F (150°C). Heat olive oil in a large Dutch oven over medium-high heat.
- Season the beef shoulder with salt and pepper, then brown it on all sides in the hot oil. Remove the meat and set aside.
- Add the diced onion and minced garlic to the pot, sautéing until softened and fragrant (about 2-3 minutes). Next, add the chopped carrots and cook for another 2-3 minutes.
- Pour in the apple cider, scraping up any brown bits. Return the beef to the pot along with thyme and bay leaves. Cover and transfer to the oven. Braise for 3-4 hours, or until fork-tender. Remove from the oven, let rest, then slice and serve.
Notes
This dish pairs well with mashed potatoes, wild rice, or a crusty loaf of bread. It can be stored in the fridge for up to 3 days or frozen for up to 3 months.
