- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples
- 1/4 cup brown sugar
- 1 teaspoon cinnamon (for topping)
- 1/2 cup powdered sugar (for icing)
- 1–2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
- In a large bowl, mix together the flour, granulated sugar, baking powder, salt, and cinnamon until well combined.
- In another bowl, combine the milk, vegetable oil, eggs, and vanilla extract. Mix until smooth and fully blended.
- Stir the wet ingredients into the dry ingredients until just combined; take care not to overmix. Gently fold in the diced apples.
- Pour half of the batter into the prepared loaf pan. Mix the brown sugar with cinnamon and sprinkle half of this mixture over the batter. Add the remaining batter on top and sprinkle the rest of the brown sugar mixture over the surface.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow it to cool for a bit.
- While the bread cools, mix the powdered sugar with 1-2 tablespoons of milk to create a smooth icing.
- Drizzle the icing over the cooled bread and then slice and serve!
Notes
Use a mix of apple varieties for more complex flavor. Don’t overmix the batter; mixing just until combined keeps the bread tender.
