- 200g shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet or wok over medium heat.
- Add shrimp and cook until pink, about 2-3 minutes.
- Push shrimp to the side and add beaten eggs to the pan, scrambling until cooked.
- Add mixed vegetables and cooked rice, stirring to combine.
- Pour soy sauce over the mixture and stir-fry for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Garnish with chopped green onions before serving.
