Ingredients

  • 2 cups cooked rice
  • 200g shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet or wok over medium heat.
  2. Add shrimp and cook until pink, about 2-3 minutes.
  3. Push shrimp to the side and add beaten eggs to the pan, scrambling until cooked.
  4. Add mixed vegetables and cooked rice, stirring to combine.
  5. Pour soy sauce over the mixture and stir-fry for an additional 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.
