Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup oats
  • 1/2 cup protein powder
  • 1/2 cup almond milk or any milk of choice
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas, oats, protein powder, almond milk, honey (or maple syrup), baking powder, vanilla extract, cinnamon, and salt in a large bowl.
  3. Pour the batter into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  5. Let the muffins cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.

Notes

Use very ripe bananas for better sweetness and texture. Optional: mix in nuts or chocolate chips for added flavor.
