Delightful and health-conscious bliss balls packed with the comforting flavors of carrot cake, perfect for a quick snack or gathering.


Ingredients

Scale
  • 1 cup almonds
  • 1 cup grated carrots
  • 1/2 cup pitted dates
  • 1/2 cup shredded coconut
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup maple syrup or honey
  • 1/4 cup raisins (optional)
  • A pinch of salt

Instructions

  1. In a food processor, combine the almonds, grated carrots, pitted dates, shredded coconut, cinnamon, nutmeg, and salt until evenly distributed.
  2. Pulse the mixture until it’s well combined and sticky; add more maple syrup or honey if necessary for consistency.
  3. Stir in raisins if desired for added sweetness and texture.
  4. Scoop out tablespoon-sized portions and roll them into balls.
  5. Refrigerate for at least 30 minutes before serving to firm up and enhance flavor.
