Ingredients

  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 cup cooked shrimp or chicken
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 3 green onions, sliced
  • 1/4 cup peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • Chopped peanuts and cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
  3. Add the cooked shrimp or chicken to the skillet and stir-fry for 2-3 minutes.
  4. Push the mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  5. Add the cooked noodles, bean sprouts, and sliced green onions to the skillet. Stir everything together.
  6. In a small bowl, mix the peanut butter, soy sauce, and lime juice until smooth. Pour this sauce over the noodle mixture and toss together.
  7. Serve the Pad Thai garnished with chopped peanuts and fresh cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave and add a splash of water or soy sauce if dry.
