- 8 ounces rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup cooked shrimp or chicken
- 2 eggs, beaten
- 1 cup bean sprouts
- 3 green onions, sliced
- 1/4 cup peanut butter
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- Chopped peanuts and cilantro for garnish
Instructions
- Cook the rice noodles according to package instructions and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
- Add the cooked shrimp or chicken to the skillet and stir-fry for 2-3 minutes.
- Push the mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- Add the cooked noodles, bean sprouts, and sliced green onions to the skillet. Stir everything together.
- In a small bowl, mix the peanut butter, soy sauce, and lime juice until smooth. Pour this sauce over the noodle mixture and toss together.
- Serve the Pad Thai garnished with chopped peanuts and fresh cilantro.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave and add a splash of water or soy sauce if dry.
